Blender Banana Oat Mini Muffins Recipe
Ingredients:
2 ripe bananas
2 cups old-fashioned oats
2 eggs
6 oz of whole milk cottage cheese
1/3 cup maple syrup
1 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon vanilla extract
Instructions:
Preheat your oven to 375°F and grease a muffin tin.
Add all ingredients to a blender and blend until smooth.
Pour the batter directly into the mini muffin tin, filling each about ¾ full.
Bake for 10-14 min for mini muffins, or 20-24 min for standard muffins until golden and a toothpick inserted in the center comes out clean.
Let cool for a few minutes before removing from the pan.
